I love oysters. To the point where Macgyver Boyfriend says I have an oyster problem, an addiction. I don't enjoy cooked oysters as much anymore because I prefer the taste of a fresh, raw oyster with a squeeze of lemon juice.
You can enjoy oysters in Canberra at almost any high end restaurant for about $3 to $4.50 per oyster. The cheapest I've seen them is at C Dine's Buck a Shuck Happy Hour, where you can get them for $1 each on Friday evenings.
You can also buy them already open at Fishmongers between $14 - $18 a dozen. (Available from the fish markets in the Canberra Centre and Woden shopping centre)
However, if you want to enjoy cheap and delicious oysters at a time that suits you, read on.
You've probably worked out by now that the best way to have natural oysters is to shuck them yourself. That way, you don't lose the oyster juice in transport.

How to shuck oysters
I did what anyone does these days to learn anything - I looked it up on Youtube.
Here are the two Youtube videos I relied on in my oyster shucking research.
I watched these videos and then bought myself an oyster knife. You can find them at fishing shops or extensive hospitality stores. I bought mine from a fishing shop at Bateman's Bay for $5.
I prefer rock oysters, so I bought a whole lot of unshucked oysters from a fishmonger at Bateman's Bay. I got them for $10 a dozen. And then I started practising.
If you don't have an abundance of crushed ice or salt to lay the oysters on, just scrunch up a tea towel to lay the oysters on. It will prevent them from rocking to their sides on the plate and losing their juices.
It took a while to get the hang of shucking oysters. I had quite a few failed attempts (Macgyver Boyfriend successfully did it for his first try!). But by the end of the first dozen, I had successfully shucked a few oysters by myself!!
It was a magical and proud moment when I ate the oysters I had shucked myself.
(Note that if you prefer Pacific oysters, they are much more difficult to shuck yourself)

Where to buy unshucked oysters in Canberra
Sea Harvest - Fyshwick Markets
Unshucked rock oysters are $9.99 a dozen. Shucked oysters start from around $14 a dozen.
Tall Paul Oysters - Capital Region Farmers Market
Unshucked oysters start from $12 a dozen. He will shuck the rock oysters for you for free but Pacific oysters cost an extra $2 per oyster.
So to sum up, for 80 cents an oyster and a little elbow grease, you can get the best natural oyster you've ever had - full of oyster juice!
